Ingredients

Cupcakes

  • 100 g Butter
  • 225 g caster sugar
  • 1 level tsp Vanilla Bean Paste
  • 2 eggs
  • 260 g self-raising flour
  • 125 g Greek yoghurt
  • 60 g Milk

Apple pie filling

  • 3 granny smith apples
  • 1 level tsp Vanilla Bean Paste
  • 25 g Butter
  • 50 g brown sugar
  • 1/4 level tbsp ground cinnamon

Cream cheese frosting

  • 375 g cream cheese
  • 1 level tbsp lemon juice
  • 180 g icing sugar
  • 1 level tbsp Vanilla Bean Paste

Recipe's preparation

    Cupcakes
  1. 1. Preheat oven 180 degrees and place cupcake patties into a muffin tray
    2. Place butter, vanilla and sugar in bowl and cream spd 5, 10sec.
    3. Remove MC and on spd 3, 30sec add the eggs one at a time.
    4. Add half the flour and mix spd 5, 10 sec.
    5. Add yoghurt, milk and remaining flour and mix spd 4, 10sec.
    6. Spoon into patties and cook 15-20mins. Cool completely
    7. Clean and dry bowl

  2. Apple pie filling
  3. 1. Peel, core and cube apples
    2. Place all ingredients into bowl and add 1-2 tsp water last.
    3. Cook at Varoma temp, 5mins, no MC and spd 1
    4. Scrape down sides and repeat for 3 extra minutes.
    5. Pour or sieve off any excess liquid and then refrigerate til completely cooled.
    6. Clean and dry bowl.

  4. Cream cheese frosting
  5. 1. Place all ingredients into bowl and beat spd 5, 30sec
    2. Place frosting into piping bag

  6. Assembly
  7. 1. Hollow out the middle of each cupcake about 1/2 the depth
    2. Spoon in the apple mixture
    3. Pipe over frosting
    4. Optional decoration of dusting with cinnamon sugar, drizzle salted caramel sauce or BOTH
