Ingredients
Apricot Crumble Slice
- 150 g dried apricots
- 600 g tin apricots & juice
- 190 g water
- 3 tbsp lemon juice
- 45 g Coconut
- 3 tbsp sugar
- 20 g cornflour
Base & Topping
- 250 g Butter
- 150 g caster sugar
- 1 tsp vanilla essence
- 400 g flour
- 1/4 C Coconut

- TM: 150g dried apricots. 5 sec / speed 6.
Add 600g tin apricots & juice, 190g water, 3 TBSP lemon juice, 45g coconut, 3 TBSP sugar, 20g cornflour.
7 min / 80°C / reverse stir speed. Set aside to cool. - Grease & line 30 x 20cm slice pan.
TM: 250g butter, 150g caster sugar, 1 tsp vanilla. 40 sec / 60°C / speed 3.
Add 400g flour. 10 sec / speed 4. Scrape bowl. 10 sec / speed 3.
Tip mixture into prepared pan. Take out 250g of this mixture and put this back in TM bowl, pressing remainder into prepared pan.
Pour cooled apricot mixture over base.
To TM mixture - add ¼ C coconut. 12 sec / speed 2. Crumble remaining mixture from TM bowl over apricot.
Bake 170°C x 30 – 35 mins.
MAKES: 18 – 20 slices

Delicious 😋. Absolutely the best slice. Only thing I changed was to use half plain flour and half self raising flour. Definitely make again, and again 😘

I used fresh apricots from our tree, 600 Gm, but didn't add the water so as to have a firmer consistency. I also used SRF instead of plain.
Taste was perfect, not too sweet . Base and topping just right too.

Absoluely delicious!. Replaced 200g of plain flour with 200g SR Flour, just to get a bit of height to the base. Apricot mixture was spot on. Tasted just like it has come from a bakery. Thanks for sharing this fabulous recipe.
