  • 120 grams pitted dates
  • 180 grams water
  • 160 grams Butter
  • 220 grams raw sugar
  • 300 grams Self rising flour
  • 40 grams Shredded coconut

Recipe's preparation

    Apricot and Date Slice
  1. Preheat oven to 180 degrees. Grease lamington tin and set aside.

    2. place apricots and dates in mixing bowl (check there are no pits left in the dates) and chop 10 sec/ sp 5.

    3. Add water and cook 100 deg/ 2mins 30 sec/ Counter-clockwise operation"Counter-clockwise operation" / sp 1. Set aside

    4. Without washing bowl place butter in bowl and melt 2 min/ 80 deg/ sp 1.

    5. add sugar, flour, coconut, and reserved date and apricot mixture. mix 30 sec/ sp 4.

    6. Push into lamintion tin. Bake 20-25 mins until skewer comes out clean. Allow to cool in tin for 5 minutes before turning out onto tray.

    Yummo!! I reduced the sugar to 160g and will try 120g next time. The fruit gives it a lot of natural sweetness. So moist and very tasty. Might also add some walnuts next time.

    Thank you for sharing your recipe.

    It was quick and easy and I and will definitely make this again. I used 60grams of coconut sugar only and that was sweet enough for us. Also cooked in a slice tin and sprinked with slivered almonds before cooking. Took to work for a morning tea and everyone loved it. Party

    Wow! I'm impressed. I didn't expect this slice to taste soooo good. Lovely and moist and makes a big quantity. Hope it freezes Ok as I've just popped it into the freezer. Perfect to grab and put into school lunch boxes. Will become a family favourite.... Love
