  • 15 g Shredded coconut

Apricot filling

  • 250 g water
  • 250 g dried apricots
  • 55 g caster sugar

Recipe's preparation

    Base
  1. Preheat oven to 180°C conventional or 160°C fan.
  2. Melt butter 2 min / 60°C / 3.
  3. Mix in sugar and flour 5s /sp3. Scrape and repeat.
  4. Press into lined and greased slice tin. Bake for 20 mins.
  5. Coconut topping
  6. Melt butter 2 min / 60°C / sp 3.
  7. Add coconut, flour and sugar 20s / Counter-clockwise operation"Counter-clockwise operation" sp 2. Scrape. Repeat if necessary. Set aside.
  8. Apricot Filling
  9. Chop apricots 10s / sp 6.
  10. Add water and sugar 10 min / 100°C / Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" using simmer basket, instead of measuring cup. Continue cooking until thick (like jam).
  11. Pour filling onto slice base.
  12. Crumble coconut topping on top and bake at 180°C for 20 mins.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities.
