This is really tasty, quick & easy.
im looking for advice in advance of my daughters birthday next Saturday. I used 100g honey instead of sugar, and I tried to replace the sour cream with 100g coconut oil - which isn't bad, but I'm not getting the light & fluffy everyone's talking about. Any suggestions?

Really liked this cake, beautifully moist. I added an extra banana and only used 2 eggs. Used less sugar as suggested and added 1/2 cup coconut.
