Ingredients

Dry ingredients

  • 270 g plain four
  • 140 g sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Balance of ingredients

  • 250 g ripe bananas
  • 1 egg
  • 90 g Rice Bran Oil
  • 120 g natural Yoghurt or Sour Cream
  • 1 teaspoon vanilla extract
  • 110 g milk chocolate bits

Recipe's preparation

  1. Place all dry ingredients into the Thermo bowl. Mix on speed 4 for 5-10 seconds. Set aside.

  2. Place bananas in the Thermo bowl. Mix on speed 3 for 5 seconds.

  3. Add egg, oil, yoghurt and vanilla extract. Mix on speed 3 for 5-10 seconds.

  4. Add dry ingredients and choc bits. Mix on counter-clockwise operation, speed 2 for 30-45 seconds using the spatula to assist in the mixing. Check that it is mixed and if necessary, mix for a further few seconds. Be careful not to overmix.

  5. Place in muffin tins in a preheated 180 degree oven for 18-25 minutes until slightly golden. Leave in muffin tins for a few minutes to cool before turning on to a wire rack.

Tip

I sometimes use a mix of milk, dark and white chocolate bits.

If you don't have rice bran oil, then vegetable oil is fine. 

When you find you bananas going a little brown (or a lot) then chop them in your thermo and place them in small snap lock bogs in 250g lots in the freezer. Keeps for months and you will have banana whenever you need it.

I often make 2 batches of these and freeze them in a large snap lock bag. It is easy then to take them out of the freezer and pop in the kids school lunchbox. They will thaw out by recess- delicious!

    Made these this afternoon. Super, super moist and a massive hit. I made 9 full size muffins and 20 mini muffins. An easy, great tasting recipe that I will certainly be making again and again.

    YUM!!  do yourself a favour & make these.  I like the use of yoghurt & the kids are getting a treat that is filled with goodies!!
