  • 125 grams Butter
  • 1 egg
  • 1 teaspoon vanilla essense
  • 3 bananas
  • 210 grams plain flour
  • 90 grams raw sugar
  • 1 teaspoon baking powder
  • 1 teaspoon bicarb soda

Recipe's preparation

  1. Pre Heat Oven to 190 degrees and grease muffin tray

  2. Add Butter to bowl and melt, 60 degrees, 2 min, speed 1

  3. Add Egg, Banana and Vanilla and combine 10 sec, speed 3

  4. Add Sugar, Flour, Baking Powder and Bicarb and combine 10 sec, speed 4

  5. Place into greased muffin tray and bake on 190 degrees for 15 - 20 mins or until golden.

Tip

These are great to freeze.

    Absolutely delicious. I used about 50g of sugar and added some choc chips on top before baking. This will be my new go to recipe

    A yummy buttery recipe. I used 70g of brown sugar and wholemeal flour instead of plain. I added 1 teaspoon of cinnaman. The result was deliciously light and puffy.. I might try a variation of this recipe with apple 🍏🤔

    Made these this afternoon and they went down a treat with my family. I did make some adaptations.

    1. Used Coconut Oil instead of Butter (same "weight"
    2. Used 70g of sugar.

    Next time I'll change sugar to maple syrup I think and then use GF flour.

    UPDATE:
    Second Batch
    1. Used Coconut Oil
    2. Used 60g of sugar (keep it at 70g if bananas aren't really ripe).
    3. Used Gluten Free Flour
    4. Added a tablespoon of Chia Seeds for more nutrition.

    = Amazing!

    Delicious 😋 I also added choc chips and reduced the raw sugar to 70g. I baked in a rectangular tray, once out sliced into cake slices. Saved a little time not using a muffin tray. 😁 thank you! Definitely a keeper!!

    These were so light and fluffy. Only added 70gms of sugar as many suggestions.
    I also added half teaspoon cinnamon plus 100gms white choc chips just folded in by hand after mixed.
    Will be adding this to my favourites.
