Ingredients
Banana and white chocolate tray cake
- 60 g Butter
- 120 g White Chocolate Chips
- 260 g ripe bananas, about 3 medium
- 90 g sugar
- 150 g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- dash vanilla extract
- 1 egg
Icing (optional)
- 250 g icing sugar
- enough cream to make a spreadable mixture

- "Closed lid" Preheat the oven to 180°C.
Greaseline a small slice tray.
Melt butter and choc bits 3mins/60°C/sp1.5
Scrape.
Add bananas and sugar 5secs/sp4
Add the flour, baking powder, bicarb, vanilla, egg and blend 10secs/sp4.
Scrape and repeat if necessary.
Spread into the prepared tray.
Bake 15-20 mins or until cooked when tested.
Leave un-iced and dust with icing sugar or ice as below.
Store in the fridge. - Combine the icing sugar with enough cream to create a spreadable mix.
I find this easiest to do by hand (remember those...?) in a small bowl.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. This was so light and fluffy, my family loved it. It will become a recipe for my "favourites" folder.
Made this today and it came out very well.
It is more like a sponge cake than a brownie. Can really taste the banana.
I cut the sugar by a third and it tasted great.
