Ingredients

Read. Set. Go

  • 3 eggs
  • 2 level teaspoons vanilla extract
  • 1 pinch salt
  • 40 grams honey or agave syrup
  • 45 grams Arrowroot or Almond Flour
  • 140 grams Milk
  • 150 grams Heavy or Double Cream
  • 140 grams Blackberries, or fruit of choice

Recipe's preparation

    Prepare your pie dish
  1. give it a good rub with butter and preheat your oven to 180 degrees

  2. for the pie
  3. insert butterfly and add 3 eggs.

    whisk for 10 seconds, speed 4

  4. add in 2tsp vanilla, pinch of salt and 40grams of your choice of honey or agave syrup.

    whizz that up for another 10 seconds on speed 4.

  5. in goes 45grams of either arrowroot or almond flour, mix for 10 seconds on speed 3.5

  6. splash in 150grams milk and dollop in 140grams heavy cream.

    mix for another 10 seconds on speed 4

  7. remove butterfly and pour half of prepared mix into pie dish.

    place your blackberries or favourite fruit in the mixture.

    when that's done and you've licked your fingers, pour the remaining mixture over top.

  8. bake for 45-50 minutes.

     

Tip

Wait for pie to cool completely before serving,

Dont use an overly large pie dish as the end result will be quite thin, although it does puff up while baking, it does sink back down.
