- 375 g raisins
- 375 g sultanas
- 250 g currants
- 125 g glace cherries
- 125 g rum or brandy
- 250 g breadcrumbs
- 1 --- carrot
- 185 g seeded dates
- 125 g Glacé ginger
- 1 lemon, rind only
- 250 g softened butter
- 250 g brown sugar
- 4 eggs
- 125 g plum jam
- 250 g plain flour
- 1 tsp ground nutmeg
- 1 tsp cinnamon
- 80 g orange juice

Step 1
Measure first 5 ingredients into TM Bowl.
Turn out into a bowl with a lid and allow to stand for at least 24 hours. Stirring occassionally.
Step 2
Add bread to TM bowl and blitz 5 seconds speed 10.
Set aside.
Chop carrot 5 seconds speed 7, add to fruit mixture.
Chop dates and ginger, 3 seconds speed 7. Add to fruit and carrot.
Chop lemon rind 10 seconds speed 9, add to fruit mix.
Step 3
Cream butter and sugar 30 seconds speed 5.
Scrape down sides.
With lid on and speed set to 4, add eggs in one at a time through lid. Blend 20 seconds further speed 4.
Add plum jam and blend for 10 seconds speed 4.
Add flour, spices and juice, blend 30 seconds speed 5.
Step 4
Turn mixture into a large mixing bowl.
Have family and friends take turn stirring and be sure to make a wish.
Step 5
Pou into a greased heat proof dish or dishes. This is a large mixture and will make enough for 12 or more servings.
Cover with grease proof paper and foil, securing tightly with string.
Making a handle with the string will make it easier to remove from saucepan.
Step 6
Place in a saucepan of boiling water with lid on.
Steam for 4.5hours (3 hours if cooking 2 smaller puddings)
adding more boiling water if needed. (water should come 1/2 way up the bowl).
If steaming in individual ramekins, place in varoma and steam for 90 mins on varoma tempature. Making sure there is sufficient water in TM bowl, checking at the 60 min mark.
Step 7
Keep in a cool place until Christmas.
Serve with vanilla or brandy custard.

I am only giving you 3 stars for the recipe not the final result as my pudding is steaming as I write and won't be eaten for a few weeks yet!
The recipe is unfortunately very badly written. You mention putting together the fruit mixture along with the carrot, glace ginger, lemon rind etc. but then there's no mention of when to add these ingredients, not even the breadcrumbs! I figured it out for myself and made the 'cake' mixture and then tipped it into a large bowl along with the fruit mixture and breadcrumbs and stirred it altogether. However, this recipe should really be revised as a beginner cook might very well be slightly confused.
I AM hoping that despite these oversights that you got the steaming time correct (4.5 hours). From what I have looked up on the internet, most recipes state around 8 hours. I will just have to check it when the 4.5 hours is up to be sure.
Sorry for the bad feed back but so many recipes have left out steps that I felt I had to mention it. If the final result is good, I WILL give you 5 stars.
How long will these keep? I would like to make them but don't want to do too soon!
