Pumpkin spice

  • 3 level tablespoons ground cinnamon
  • 2 level teaspoons ground ginger
  • 2 level teaspoons ground nutmeg
  • 1.5 level teaspoons ground allspice
  • 1.5 level teaspoons ground cloves

Pumpkin Cupcakes

  • 425 grams butternut pumpkin, Puréed
  • 100 grams caster sugar/raw sugar milled
  • 60 grams brown sugar
  • 165 grams nestle evaporated milk
  • 115 grams plain flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 level teaspoons Pumpkin spice
  • 1 teaspoon vanilla extract
  • whipped cream for serving

Recipe's preparation

    Pumpkin spice
  1. Place all pumpkin spice ingredients into tm bowl and mix on sp 3 until combined

    place into airtight container

  2. Pumpkin cupcake
  3. place puréed pumpkin, sugars, pumpkin spice, milk and vanilla to tm bowl.

    mix on speed 3-4 for 10 seconds

     

  4. Add flour, baking powder, baking soda and salt

    mix on speed 4 for 20 seconds

  5. spray muffin holes with rice bran oil and 2/3 fill with mixture.

    bake for 20 mins at 180

    allow to cool for 20 mins before removing.

    place in fridge, decorate with whipped cream and a sprinkle of pumpkin spice.

    This was awesome! Can't wait to try it tomorrow again when it's been refrigerated over night. Went down a real treat with some salted caramel ice cream. I made it in a rectangular flan tin. Will definitely be making this again.
