Ingredients

Mixed Fruit

  • 380 g Mixed fruit, e.g. sultanas, raisins, currants
  • 220 g brown sugar
  • 110 g Butter
  • 1 level teaspoon Bi-carb soda
  • 250 g water
  • 85 g plain flour
  • 240 g Self Raising Flour
  • 2 eggs, lightly beaten

Recipe's preparation

  1. 1. Preheat oven to 160c and grease a 24cm cake pan or mini pans or muffin tray.

  2. 2. Place fruit, sugar, butter, bicarb soda and water into TMX bowl brining to the boil on 6min/110c/Speed 1. Allow mixture to cool.

     

     

     

  3. 3. Add flours and eggs and mix for 20 seconds/ speed 3.

  4. 4. Pour into chosen tin and bake for one large cake 160c for approximately 1.5 hrs. Smaller cakes will need 30 min at 160c.

  5. 5. Allow to cool.

    such a lovely, easy recipe. Very similar to my Mum's old recipe. We add 1tsp mixed spice and half a tsp cinnamon. I also use raw sugar. Fail proof. Always moist. A family favourite 😊

    Really easy to make....can’t wait to taste it. Many thanks to the others for tips.....I halved the sugar. Also used “Reverse” when mixing the flours and I also added the spices.

    WINNING CHRISTMAS / FRUIT CAKE!!

    One of my children LOVES fruit cake and I have struggled to find a good (and simple) recipe... until today. This is absolutely delicious and is going to disappear far too quickly!! A very similar recipe is on Cookidoo which gives half the sugar, so that's what I did too, and it is plenty sweet enough (for us) like that. This is going to be a regular all year round for me now. LOVE IT!! Thank you!

    Great training snack. I make this with reduced sugar as something for my son to take on his training rides. It usually doesn’t last long as the rest of the family love it too.
