    Method
  1. Add bananas, honey and coconut oil and blitz on speed 5 for 5 seconds.

    Add remaing ingrediants and mix for 6-8 seconds on speed 5 till just combined.

    Bake in "texas" muffin tins for 15-20min at 180deg.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Just made a single batch and placed a teaspoon of home made black grape and apple jam in the centre. I didn't think they would be very nice as the mixture was thick and brownish. How wrong I was! Light and fluffy muffins - will make again, great for breakfast on the run. Thank you for posting. tmrc_emoticons.)
