Ingredients
- 140 g wholemeal spelt flour
- 140 g white spelt flour
- 50 g Rapadura Sugar
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon Nutmeg
- 1/4 teaspoon cinnamon
- 1 teaspoon Vanilla Bean Paste
- 2 eggs
- 60 g coconut oil
- 220 g buttermilk, From making butter
- 70 g honey, Or less if you prefer

1. Melt the coconut Oil - 50 degrees, 2 mins, speed 1
2. Add eggs, buttermilk, honey and vanilla - mix Speed 4, 10 seconds.
3. Add flour, rapadura sugar, nutmeg, cinnamon, baking powder - mix Speed 5, 20 Seconds.
4. Pour into Doughnut Tin, or muffin pans, or cake ball moulds. Bake in moderate 180 degree oven for 10 to 15 minutes.
Tip
I have coated these with a general icing and sprinkles. I have also made cinnamon sugar with rapadura sugar and cinnamon and coated them in this while they are still hot.

I made these with mini doughnut pans I bought on eBay. Turned out perfectly. I dipped in milk before rolling in cinnamon sugar. I think they will be gone very quickly!
