Ingredients

Biscuits

  • 50 grams Butter, softened
  • 60 grams brown sugar
  • 50gr grams yoghurt, plain,natural,greek,kefir,vanilla
  • 150 grams Self Raising Flour, can sub for spelt and 2 tsp of baking powder
  • 100 grams almond meal, or 100 gr almonds -milled in tmx
  • 10 grams cacao powder
  • 140 grams beetroot peeled
  • 50 grams dark choc chips, can use milk choc chips or cacao nibs

Recipe's preparation

    Adapted from Choc beetroot biscuit by Kyrstie Barca (a fresh legacy)
  1. Peel Beetroot and chop into pieces, place in the Thermomix and chop for 6 seconds speed 6. 

     

    Add 1 MC of water and cook for 10 mins 100 degree speed 1.Puree 30 seconds speed 8.

     

    Pour into a separate bowl and cool. Clean the bowl.

  2. Preheat the oven to 180 degrees.

     

    Place butter,sugar, yoghurt, egg into the mixing bowl and mix 20 seconds speed 4.

     

    Add beetroot,flour,almond meal, cacao powder and mix for 15 seconds speed 3. Add choc chips and mix 10 seconds reverse speed 3.

     

    On a lined baking tray place heaped teaspoons of mixture on the tray. The mixture is similar to cake batter but a bit thicker. 

     

    Place in the oven and cook for 15-20 min. Cool on a baking tray. These biscuits crunch on the outside when cooled . 

    Store in airtight container once cooled

    There is egg in the recipe method but not in the ingredients list. Is there supposed to be one egg included?

    These tasted nice with those I cooked having more of a cake texture than biscuit.

    They seemed to go stale very quickly after only a couple of days (again, more of a cake thing) so mabe benefit from freezing if not eating them by the next day.
