Ingredients

  • 400 gplain chocolate (70% cocoa solids) broken into pieces
  • 500 g unsalted butter, room temperature
  • 700 g brown sugar
  • 10 eggs
  • 2 tsp vanilla extract
  • 280 gplain, flour, sifted

Recipe's preparation

  1. Melt chocolate in a bowl over a saucepan of warm water.  Set aside to cool.

    Place butter in TM and mix for 20 seconds on speed 5

    Add sugar and mix for 45 seconds on speed 5.  Scrape down sides of bowl, add vanilla extract and mix for a further 45 seconds on speed 5.

    Add eggs one at a  time while motor is running on speed 5.  Allow 15 seconds between the addition of each egg.

    Add melted chocolate and mix for 20 seconds on speed 5.

    Add flour and mix for 15 seconds on speed 5.

    Divide the mixture between two greased and lined 20cm cake tins  and cook at 140C for 1 hour and 5 minutes.  The baked cake should be well risen with a crust but should still wobble when shaken gently.  Remove from the oven and allow to cool in the tin.

    When completely cool, remove from the tins.  Sandwich together with chocolate ganache or  buttercream or a mixture of the two.

    For an extra special occasion, the cake can be covered in chocolate ganache and decorated with white chocolate curls and/or raspberries or strawberries.  Makes a great birthday cake for any age!
