Ingredients
Base
- 250 g Macadamia Nuts
- 100 g Desiccated Coconut
- 15 g psyllium husks
- 5 g Vanilla Paste
- 7 medjool dates
- pinch salt
Caramel
- 8 medjool dates
- 120 g almond butter
- 5 g Vanilla Paste
- 30 g honey
- 1/4 tsp salt
- 100 g coconut oil
- 45 g water

Place the nuts, coconut and psyllium husk and process to crumb consistency 10sec/speed 5.
Add the vanilla, dates & salt and combine 20sec/speed 7.
Line a tine with greaseproof paper and evenly spread the mixture in the tin. Press down and put it in the fridge for 10-15min to set.
Blend the dates, almond butter, vanilla, salt and honey for 1min/speed 7.
Add the coconut oil and water and blend for a further 1min/speed7. (The mixure may split, don't be alarmed just continue to blend).
Spread the caramel mixture evenly over the set base.
Sprinkle with seeds of your choice. I use chia, sunflower and pumpkin seeds.
Return to the fridge to set.
