Ingredients

Cupcake Ingredients

  • 60 g Butter, softened
  • 150 g brown sugar
  • 2 egg whites
  • 1 tsp vanilla
  • 145 g Milk
  • 225 g SR flour
  • 1/4 tsp baking powder
  • Pinch salt
  • 5 g or empty tea leaves from 5 Chai Tea Bags
  • 100 g White Chocolate Chips

The Icing

  • 250 g cream cheese, softened
  • 330 g icing sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla

Recipe's preparation

    Cupcake Method:-
  1. 1.
    Preheat oven 180°C.
    Line cupcake tray with cupcake cases, or just grease the cupcake tray.
    2.
    Place softened butter and sugar in TM bowl. 10 sec/speed 4
    Scrap down sides of the TM bowl.
    3.
    Add egg whites. 10 sec/speed 4
    Scrape down sides of the TM bowl, then 20 sec/speed 7
    4.
    Add vanilla and milk. 10 sec/speed 4
    Add SR flour, baking powder, salt and chai tea leaves.
    20 sec/speed 2
    Add white chocolate chips. 20 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 1
    5.
    Spoon into the prepared cupcake tin, and bake for 15-20 minutes or until golden brown.
    6.
    Cool cupcakes in the cupcake tin for 5 minutes before removing onto a wire rack to cool completely.

    The Icing:-

    1.
    Into the cleaned, dried TM bowl, place softened cream cheese (cut into pieces), icing sugar, lemon juice, and vanilla.
    15 sec/speed 5
    2.
    Scrape down sides, then do a further 5-10 sec/speed 5
    3.
    Ice the cooled cupcakes

    Decorating Suggestions:-

    Decorate with a few white chocolate chips
    or even
    A fine dusting of cinnamon

Tip

This recipe makes 12 cupcakes, or 24 small ones. Adjust the baking time to be a few minutes less for the smaller ones.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
