- 120 grams Butter (salted)
- 2 tablespoon golden syrup
- 90 grams rolled oats
- 80 grams Desiccated Coconut
- 150 gram plain flour
- 115 grams caster sugar
- 55 grams brown sugar
- 1 teaspoon Bicarb of soda (baking soda)
- 2 tablespoon Boiling water

Preheat oven to 160 degrees Celsius (140 degrees Celsius fan-forced).
Line two large baking trays with baking paper.
Put butter (120 grams) into bowl. Mix 5 seconds/speed 7. Add Golden syrup (2 tablespoons). 1 minute 30 seconds/80 degrees/Speed 1
Add Bicarb of Soda (1 teaspoon) to a cup with boiling water (2 tablespoons) and stir to dissolve. Once dissolved add to bowl with melted butter and golden syrup mixture.
Add rolled oats (90 grams), desiccated coconut (80 grams), Plain Flour (150 grams), Caster sugar (115 grams), Brown Sugar (55 grams). Mix 8 seconds/Reverse/Speed 7 - you can mix this without using reverse but it will mill the oats down to smaller half size pieces. It's a matter of personal choice as to whether you like your anzac biscuits with larger chunkier oats or not.
Check to make sure everything is well mixed. I like to give mine a turn with the spatula instead of mixing more in the thermomix if I think it needs it to avoid over mixing.
Roll packed tablespoon size balls of the mixture and place about 5 cms apart onto prepared trays. Push down gently with the back of a fork.
Bake in oven until golden brown - about 15 minutes. If you cook for much longer you will produce a dryer crispier biscuit.
