- 75 gram cream
- 25 gram sugar
- 150 grams milk (plus an extra 2 Tablespoons for brushing)
- 1 egg
- 450 gram Self Raising Flour

Preheat oven to 180 degrees and line a cookie sheet or a baking tray with baking paper.
Put sugar (25 grams) in bowl and 10 seconds/speed 9
Add sour cream (75 grams), cream (75 grams), milk (150 grams) and egg. 8 seconds/speed 4
Add self raising flour (450 grams). Speed 6/6 seconds. You don't want to over mix scone dough so don't worry if there is still a small amount of flour not totally blended.
Turn out onto a floured bench/board or thermo mat and without playing with the dough very much quickly pat it into a rectangular shape about 3-4 cms high. Let dough sit for about 15 minutes before cutting into circles with a scone cutter or a floured glass.
Brush with milk and bake in oven for about 12 minutes.

Tip
Dip cutters or glass in flour to prevent the dough from sticking to it when cutting. Don't overwork the dough. Less is best when it comes to scones.

This seems to be a fail proof recipe. Have made it several times and all times scones are delicious!
