Ingredients

Base

  • 90 gram brown sugar
  • 45 grams dessicated coconut
  • 70 grams Self Raising Flour
  • 85 grams Butter

Caramel

  • 30 gram Butter
  • 60 grams golden syrup
  • 395 grams condensed milk, (1 can)
  • 150 grams Milk (or dark) chocolate chips
  • 1 tablespoon Butter

  1. 1 Preheat oven to 180C). Grease an 8-inch baking pan and line bottom and sides with wax paper.

     

    2 Add butter (85 grams) to bowl, 1 minute/80 degrees/slowest speed. Add brown sugar, coconut and flour 10 seconds/speed 7. Press into baking pan. 

     

    3 Bake for 10-12 minutes until lightly-brown and slightly-risen. Make caramel during this time.

     

    4 Add Butter in bowl (30 grams)  45 seconds/80 degrees/slowest speed.  Insert butterfly. Add golden syrup and condensed milk. 8 minutes/80 degrees/speed 2

     

    5 Gently spread caramel evenly over base. Return to oven for a further 10-12 minutes (a border of lightly-browned caramel will form around the edges of the slice). Allow slice to cool to room temperature.

     

    6 For the chocolate topping:  Add chocolate to bowl. 5 seconds/speed 10 to grate. Scrape down sides and repeat. Add butter. 5 Minutes/50 degrees/speed 2. Check to see if chocolate has melted if not then 65 degrees/speed 3 until it's melted. Spread chocolate over base and caramel. Refrigerate until chocolate is set, about 30 minutes. Holding onto wax paper, remove slice from baking pan. Cut into 12 squares, using a hot, dry knife. You may have to dip your knife into very hot water (and dry) before making subsequent cuts, to keep the cuts neat.

Tip

Don't leave slice in fridge for too long before cutting or chocolate top will crack (as in picture)..

    Have made this multiple times, always a winner. I use gluten free self raising flour and still works perfectly. I use a teaspoon of coconut oil in with the chocolate instead of butter, and it stops it from cracking when you cut it.

    Delicious. I cooked the caramel for 12-14 mins to get a richer, darker colour. Could also add salt to it before baking. Excellent!

    Perfect Caramel Slice, just how I remember it from my childhood. I doubled the recipe and baked in a lamination sized baking dish. Everyone at work loved it and everyone wanted seconds. I will definitely keep this as my one & only caramel slice recipe! Thanks for sharing
