Ingredients

  • 100 gms Almond Meal
  • 100 gms Spelt Flour
  • 100 gms Raw Sugar
  • 1 tsp baking powder
  • 1 tbsp vanilla extract
  • 1 lemon rind
  • 1 tbsp olive oil
  • 1 tbsp cocoa
  • 1 egg
  • Extra Icing Sugar and Almonds

Recipe's preparation

  1. 1.  Place Lemon Rind and Raw Sugar into TM bowl and mill for 10 Seconds on Speed 9.

    2.  Add all the dry ingredients and mix together for 8 Seconds on Speed 6.

    3.  Add Vanilla, Egg and Oil and mix together for 10 Seconds on Speed 4.

    4.  Set dial to Closed Lid Position Closed lid"Closed lid" and mix for 30 Seconds on Interval Speed Dough mode"Dough mode"

    5.  Form small balls and roll into extra icing mixture then place an almond in the middle of the biscuit pressing down slightly.

    6.  Bake in a pre-heated 180C oven for 15 Minutes or until ready.

Tip

If you wish to make these biscuits Gluten Free - Use 200gms of Almond Meal and omit the Spelt.

    These are so yummy, I think I have made about 4 batches in the last couple of weeks! I used all almond meal, and added orange zest instead of lemon to make them choc orange tmrc_emoticons.) Thanks for such a great recipe, they turn out perfectly everytime.

    I actually forgot to add the almond meal and they still turned out great! I was wondering why it was a pretty runny for a biscuit dough lol! I'll definitely try and again with the almond meal  tmrc_emoticons.;)

    Made these today and so glad I doubled the recipe because they are delicious! I used 170g sugar (doubled recipe) but it was still a bit sweet. I also used cacao powder and didn't use lemon rind. Ill definitely be making this again!

    These are fabulous! Made them with only the almond meal, they went soo quickly. Kids loved them too.

    Very yummy! Didn't have olive oil so used coconut oil, and made with only almond meal. Won't include lemon rind next time as kids didn't really like the lemony taste. Such an easy and versatile biscuit that I will make again.

    Expect a miracle.....

    tmrc_emoticons.) These sound absolutely divine will make some today I am new to this site.  some of the recipes sound so good, will have to start try all.  New to thermomix as well.
