Chocolate Chip Muffins
- 315 grams plain flour
- 1 tbsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 114 grams unsalted butter
- 200 grams sugar
- 2 large eggs
- 240 grams buttermilk
- 1 tbsp vanilla extract
- 265 grams dark chocolate chips

- Preheat oven to 220°C. Spray a standard 12-cup muffin pan with non-stick cooking spray or line.
- Place bowl on TM mixing bowl lid and weigh in the flour, baking powder, baking soda, and salt. Then weigh in the chocolate chips, toss lightlly and set aside.
- Weigh in the butter and melt for 2min/60°C/spd 3
- Weigh in sugar, eggs, buttermilk and vanilla.
5sec/spd 4 - Add the dry mix back in. 5sec/spd 4 or until just combined. Pour into muffin cases evenly.
- Bake at 220°C for 5 minutes. Then keeping the muffins in the oven, reduce the temperature to 180°C and continue to bake for another 15-17 minutes or until a toothpick inserted into the center comes out clean. Let cool for 5-10 minutes and transfer the muffins to a cooling rack. Now is the best time to enjoy the muffins while they are fresh and still warm!
Tip
Buttermilk – If you don’t have buttermilk, you can make a substitute by adding one tablespoon of white vinegar or lemon juice to a liquid measuring cup. Add your milk of choice until you reach 1 cup of liquid. Stir together and let it sit for 5 minutes to thicken before using.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
