Ingredients

Chocolate Chip Muffins

  • 315 grams plain flour
  • 1 tbsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 114 grams unsalted butter
  • 200 grams sugar
  • 2 large eggs
  • 240 grams buttermilk
  • 1 tbsp vanilla extract
  • 265 grams dark chocolate chips

Recipe's preparation

  1. Preheat oven to 220°C. Spray a standard 12-cup muffin pan with non-stick cooking spray or line.
  2. Place bowl on TM mixing bowl lid and weigh in the flour, baking powder, baking soda, and salt. Then weigh in the chocolate chips, toss lightlly and set aside.
  3. Weigh in the butter and melt for 2min/60°C/spd 3
  4. Weigh in sugar, eggs, buttermilk and vanilla.

  5. Add the dry mix back in. 5sec/spd 4 or until just combined. Pour into muffin cases evenly.
  6. Bake at 220°C for 5 minutes. Then keeping the muffins in the oven, reduce the temperature to 180°C and continue to bake for another 15-17 minutes or until a toothpick inserted into the center comes out clean. Let cool for 5-10 minutes and transfer the muffins to a cooling rack. Now is the best time to enjoy the muffins while they are fresh and still warm!

Tip

Buttermilk – If you don’t have buttermilk, you can make a substitute by adding one tablespoon of white vinegar or lemon juice to a liquid measuring cup. Add your milk of choice until you reach 1 cup of liquid. Stir together and let it sit for 5 minutes to thicken before using.
