Ingredients
Peanut Butter Biscuits
- 175 g plain flour
- 3/4 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 120 g unsalted butter
- 150 g white sugar
- 105 g brown sugar
- 125 g crunchy peanut butter
- 125 g Smooth peanut butter
- 1 egg
- 1 tbsp honey
- 1/4 tsp salt
- 1 tsp vanilla extract

- Preheat oven to 180°C and line 2 baking trays with baking paper.
- Place a bowl on lid of mixing bowl. Add flour, baking soda, baking powder, and salt. Whisk lightly and set aside.
- Beat together room temperature butter and peanut butters until well combined. 20 sec/speed 4
- Add granulated sugar and brown sugar in mixing bowl then cream 1 min/speed 4. Scrape down sides of mixing bowl with spatula.
- Add egg, honey, and vanilla extract and mix until smooth. 10 sec/speed 4
- Add flour mix in, then mix 10 sec/speed 3. Dough should be stiff and slightly sticky, but not dry.
- Roll balls of dough in white sugar before placing on an ungreased baking sheet. Make the criss-cross pattern with tines of fork.
- Bake for 8-10 minutes (180°C) until lightly golden. Bake longer for crunchier cookies, shorter time for chewier. Do not over bake.
- Leave on tray to cool for 5 minutes then transfer to a wire rack to cool completely. Serve or store in an airtight container until needed.
Tip
If you find the mix is too sticky at step 7, add a tablespoon of flour and just stir it through to make the mix roll-able.
