Cookie Dough
- 455 g dark chocolate chips, 60% cocoa content or greater
- 45 g unsalted butter
- 250 g Granulated sugar
- 40 g cornflour
- 3/4 tsp baking powder
- 1/2 tsp salt
- 3 eggs, Large 150g
- 100 g pecans

Place Pecan Nut in TM Bowl, Chop for 0.5 sec / Turbo, repeat if necessary
Add Butter to Chocolate chips, Melt for 3 mins / 50C / Speed 3, scrape bowl and repeat for 2mins
Add Sugar, Cornflour, Baking Powder, Salt, Eggs, Mix for 15 secs / Speed 7, scrape down
Add 115g Chocolate Chips, Pecan nuts, Mix for 3 secs / Speed 5 "Counter-clockwise operation"
Transfer into a shallow baking dish cover with cling wrap wo prevent a skin forming and allow to rest and refridgerate overnight.
Place a rack in the middle of the oven and preheat oven to 190C (Conventional oven), 175C (Convection Oven)
Using your hands break dough into balls (50g) and place them on the baking tray at least 5 cm apart from each other. Press gently on each ball with the palm of your hands to make a thick disk.
Bake for 4 mins, turn tray 180degrees around and bake for another 4 mins. When cookis are just begining to crack on top and the edge are set, the centre has a soft spot about a 5 cent coin. remove from oven, let cookie cool on the tray for 5 - 7 mins, to set further

Tip
Cookie Dough should prepare the day before to allow the dough to rest, do not over mix the dough as it will cause the dough to become tough.
Serve warm with a glass of milk.
Dough can be wrapped in plastic and kept in the fridge for up to 3 days or frozen for up to 1 week.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
