Ingredients

Coconut lemon biscuits

  • 150 g sugar
  • 1 lemon, Rind and 20g juice
  • 125 g Butter, Softened and chopped
  • dash vanilla extract
  • 80 g dessicated coconut
  • 150 g plain flour
  • 1 level tsp baking powder

Recipe's preparation

    How to:
  1. Grease/line a large baking tray.
    Preheat the oven to 170°C FF

    1. Add sugar and lemon rind to the Closed lid"Closed lid" . Blitz 10secs/sp9

    2. Scrape and add the butter and extract. Blitz 30secs/sp4

    3. Add the remaining ingredients and blend 20secs/sp4, or until combined.

    4. Place tblspns of mixture onto trays, leaving room for spreading. Flatten slightly with a fork.

    5. Bake for app. 15-20 minutes or until golden.

    6. Leave on the trays to cool slightly before transferring to a wire rack for cooling.

    7. Store in an airtight container.

    Reduced sugar to 100g and used self raising flour, they were delicious

    Very tasty. I used limes, because I had oodles of them. I also reduced the sugar to 100g. Quick, easy. I did add extra zest though as I like the stronger taste. Also, I used SR flour instead of plain and didn’t use baking powder. Don’t fancy that baking powder taste that much.
    Didn’t disappoint. Will do again. Thanks for sharing.
