Ingredients
Colomba Pasquale (Easter Dove Cake)
- 1 lemon rind
- 200 g sugar
- 150 g Butter
- 150 g cups S R flour
- 150 g Cornflour - Gluten Free, or potato flour
- 4 eggs
- 40 g marsala or other sweet wine, or Liquor e.g Amaretto or Tia Maria
- 1 pinch salt
- 1 tsp baking powder
Decoration (Easter Dove Cake)
- 50 g blanched almonds
- 500 g slivered almonds
- 100 g Dark cooking chocolate
- 30 g Butter

Place lemon rind and sugar in and pulverise for 20 secs on speed 8.
Add butter and mix for 15 secs on speed 5
Add remaining ingredients except those for the garnish and combine well for 1.30 minute on speed 6
Pour batter into the Dove mould if you have one or into a greased 25cm cake tin.
Cook in a preheated oven at 180C for 30 mins or until golden brown or a skewer comes out clean when tested.
Garnish
Add chocolate to and pulverise for 10 sec speed 8 scrape down sides
Add butter and melt for 2-3 mins, 50C, speed 3-4
Pour over cooled cake and spread evenly over,
Assemble the blanched whole almonds around outside of cake (around the cake) to outline the cake
Sprinkle the lightly toasted slivered almonds over the cake to cover the chocolate.
