Ingredients

Cornflake crunchies

  • 125 g Butter, softened
  • 180 g caster sugar
  • dash vanilla extract
  • 2 eggs
  • 300 g SR flour
  • 80 g Coconut
  • 1/2 tsp bicarbonate of soda
  • 60 g sultanas
  • 50 g choc chips, optional
  • 100 g Cornflakes, divided
  • 1 heaped tablespoon caster sugar, extra, optional

Recipe's preparation

    How to:
  1. Preheat the oven to 180°C and grease/line 2 baking trays.

    Combine the butter, vanilla and caster sugar 1m/sp4, or until nice and creamy. Scrape if neccessary.

    With the motor running at sp4/ add the eggs through the MC hole, one at a time and beat until nice and fluffy. About 1 minute.

    Add the flour, coconut and bicarb and mix 50secs/sp4, or until well combined.

    Add 40g of the Cornflakes, sultanas and choc chips and combine
    30secs/sp3/rev Counter-clockwise operation"Counter-clockwise operation" . Use your spatula to assist until just combined.

    Tip the remaining Cornflakes into a bowl, and using heaped tspns of mixture roll them into the Cornflakes, coating well.

    Sprinkle with (optional) extra caster sugar if desired.

    Place them onto the prepared sheets (allowing some room for spreading), and flatten slightly with the MC or your hand.

    Bake for 15-20 mins or until golden.

    Leave on the trays to cool for 10 mins before transferring to a wire rack.

    My Mother, & Grandma used to make these. They are a great childhood memory! I was super excited when i seen they had been put on the recipe community!

    I made these last night. I typically like the cake / biscuit mix uncooked more.Wink

    My oven tends to over cook things, so mine were a little dried out, but they were still nice. Next time I will adjust the cooking time.

    I didnt put any choc bits, (only because its not how i used to remember them, but a great idea)

    I added about 85g sultanas - I wished I added more! (about 90g-100g would have been a perfect amount)

    Its a very thick mix. My blade had trouble spinning at the end. It was like it got jammed in the mix.

    Before rolling the biscuit mix in the cornflakes at the end, I crushed the cornflakes prior.

    And i didnt sprinkle with castor sugar at the end either.

    My hubby doesnt like sultanas, so he wont be eating them, but ive got visitors today, so morning & afternoon tea here we come!!

    Very moreish. I did a couple of changes though. I added 90g sultanas (instead of 60g) and did not put the choc chips or add the extra caster sugar at the end. I also crushed the cornflakes a little then rolled mixture in them. I will definitely be making these again. Makes quite a few too. Thanks for the recipe.

    Whole family loved these! I cut the sugar down to 60g, and it was lovely, not too sweet like shop bought ones!
