Crunchy Munchy Lunchbox Muesli Bars
- 2 portion Weetbix
- 125 grams Butter
- 150 grams sugar
- 2 tablespoons honey
- 95 grams dried apricots, (or any other dried fruit)
- 1 egg
- 95 grams dessicated coconut
- 80 grams rolled oats, or muesli
- 150 grams wholemeal flour
- 1 teaspoons baking powder
- 90 grams chocolate chip

Preheat oven to 180°C fan-bake. Grease a small roasting pan and line the base with a butter paper, greasy side up.
Place Weetbix into mixing bowl and crush 5sec/speed 9. Remove from bowl and set aside.
Put the butter, sugar and honey into bowl and 3 min/50°C/speed 2 until the butter has melted.
Add in flour and baking powder 10sec/speed4
Add in egg, coconut, wheetbix and muesli/rolled oats 30 sec/

Add dried fruit and chocolate chips. (Don't add them any earlier or they will melt.)"Counter-clockwise operation" 10sec/speed3
Transfer to greased pan and press down firmly with the back of a tablespoon. Bake for 15 to 20 minutes or until golden-brown. Mark into 12 large bars or 24 squares while still warm.
Tip
For a gluten-free version, swap ordinary flour for gluten-free flour, use gluten-free Weet-Bix and other cereals, and gluten-free baking powder.
