- 90 grams Butter, coarsely chopped
- 1 level teaspoon bi-carbonate soda

- 1 egg, room temperature

- 1. Preheat oven to 180degrees C/160 degrees C fan-forced. Grease and line a 21 x 10cm (base measurement) loaf tin with baking paper, extending paper at long sides as handles.
2. Combine brown sugar, dates, apricots, and cranberries in the TM bowl and chop for 20-25secs/Speed 6-7. Scrape down the sides of the TM bowl.
3. Add the butter, bi-carbonate soda and 250mls water and cook for 8mins/100 degrees/ "Counter-clockwise operation" /Spd 2. Bring to boil and then remove from heat. Stand for 15-20 minutes to cool.
4. Add lightly beaten egg and self-raising flour to mixture and stir for 1min/"Counter-clockwise operation" /Speed 2.5 to combine. Pour into prepared loaf tin. Smooth surface.
5. Bake for 45-50mins or until a skewer inserted at the centre comes out clean. Remove from the oven. Leave in pan for 5 minutes before transferring to a wire rack to cool. Cut into slices. Serve with butter
