SALMON MORNAY WITH EGGS AND VEGETABLES
- 425 grams Red Salmon, canned, skin and bones removed
- 1 Bechamel sauce, Every Day Cookbook (Page32)
- 4 eggs, hard boiled, shelled and chopped
- 1 onion, chopped finely
- 1 heaped teaspoons tarragon, dried
- ½ level teaspoons white pepper
- 50 grams panko breadcrumbs
- spray extra olive oil
- 1 level tablespoons parsley, fresh, chopped
- 2 level tablespoons capers, salted, washed and drained
- 30 grams Parmesan cheese, grated
- 1 carrot, medium, sliced
- 200 grams cauliflower, small florets
- 75 grams peas, baby, frozen

- 1. Make Bechamel Sauce as per EDC.
2. Using Varoma (1 litre water) and simmering basket, add eggs to simmering basket and carrots, cauliflower and peas to Varoma, and steam for 20 minutes. Shell hard boiled eggs and cut into pieces.
3. Add tarragon, pepper, eggs, onions, capers, cauliflower, carrots, peas and salmon into the thermomix jug with the bechamel sauce and stir for 1 minute ,"Counter-clockwise operation" , Speed 1.
4. Check seasoning and adjust if necessary and pour into greased casserole.
5. Combine breadcrumbs,parmesan and parsley. Sprinkle over mornat and spray lightly with oil.
6. Place into a preheated oven and bake at 180C until golden and bubbling.
