Ingredients
PINEAPPLE BOILED FRUIT CAKE VARIATION
- 1 x440 g tin crushed pineapple
- 500 gmixed fruit
- 120 g Butter
- 150 g Muscovada Sugar
- 1 tsp mixed spice
- 1 tsp bicarb soda
- 140 g plain flour
- 140 gself raising flour
- 2 eggs

I'm cooking this todayRecipe's preparation
1. Preheat oven to 150°C.
2.Place pineapple, Mixed Dried Fruit, butter, muscovada sugar, mixed spice and bicarb soda into TM bowl and cook for 10 minutes at 100°C,
"Counter-clockwise operation" on speed 1.
3.Allow to cool.
4.Add remaining ingredients and combine for 10 seconds on speed 4 on reverse.
5.Pour mixture into a lined 20cm circular cake tin and bake for 1.5hours at 150°C, then reduce to 120°C for 30 minutes.
6. Insert skewer into middle of cake to check if cooked. Turn out onto a cake rack to cool.
7. Enjoy.

Cake should be moist – cooking time or temp may need to be reduced if browns too quickly
