Ingredients
Dark chocolate, fig & ginger Christmas fruit mince.
Fruit mince
- 1 apple, peeled, cored and cut into quarters
- 600 g dried figs
- 180 g sultanas
- 150 g dark chocolate, broken into squares
- 60 g crystallized ginger
- 225 g brandy
- 180 g Dark Brown Sugar

- "Gentle stir setting" Place apple into mixing bowl. Chop 5 seconds speed 5. Transfer into a bowl and set aside.
- Place all remaining ingredients into mixing bowl. Turbo 1 sec 5- 10 times or until desired consistency is reached.
- Add reserved apple. Mix 10 seconds reverse speed 3, using spatula through hole in lid to aid mixing.
- Pour mince into a bowl, cover and leave in a cool place for 2 days, stirring occasionally.
- Pack into sterilized jars and seal well. Leave to mature for one month before using as you would traditional fruit mince. I use sweet shortcrust pastry to make fruit mince tarts with this dark chocolate, fig and ginger filling.
Tip
Use good quality dark chocolate (I recommend Whittaker’s 72% dark Ghana chocolate)
Because turbo is so powerful be sure to peek through the hole in the lid between turbos to make sure you haven’t gone too far. Less is more!!
Allow to mature for at least a month. It definitely gets better with age!
