Ouma’s soetkoekies (sweet biscuits)
- 125 g Butter, Cut into cubes
- 220 g sugar
- 1 level tsp vanilla extract
- 2 eggs
- 1/2 level tsp salt
- 2 level tsp baking powder
- 300 g flour
- 125 g Mielie meal (corn meal)

- 1. Add butter & sugar to Thermomix bowl. Beat 30 secs/speed 4. Scrape down sides of mixing bowl.
2. Beat 30 secs/speed 4. Scrape down sides of mixing bowl.
3. Beat 30 seconds/speed 4. Scrape down sides of mixing bowl.
4. Add vanilla & then eggs one at a time through hole in lid while mixing 1 min/speed 4.
5. Add salt, baking powder, flour & mielie meal to thermomix bowl. Knead 1 minute/dough setting.
6. Transfer the dough to a lightly floured thermomat & bring into a ball. Wrap in thermomat and refrigerate until firm (at least an hour).
7. Preheat oven to 180° and place rack in the center of the oven. Line two baking sheets with baking paper or a thermomat and set aside.
8. Remove dough from the refrigerator and place on a lightly floured work surface. Roll out the dough and cut into shapes using a cookie cutter.
9. Bake for 8-10 minutes at 180° until golden brown.
10. Allow to cool on tray for 10 minutes before transferring to a wire rack to cool completely.
Tip
Mielie Meal or maize meal is a relatively coarse flour (much coarser than cornflour) made from maize (which is known as mielies in South Africa). It is available in the international section of the supermarket or from a speciality South African shop.
Soetkoekies are crisp biscuits perfect for dipping into tea or coffee. They are popular at Christmas time but delicious any time of the year.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
