Dotty's Lemon and Sultana Tea Loaf
- 1 cup (250ml) tea, strong, hot
- 170 g sultanas
- 1 lemon, rind only (save juice for (optional lemon drizzle)
- 160 g sugar
- 340 g SR flour
- dash vanilla extract
- 1 egg

- Combine the tea and sultanas/fruit in a small bowl and set aside for a minimum of 1 hour or overnight.
Preheat the oven to 180°C.
Grease and line a medium loaf tin.
Blitz lemon rind and sugar 10secs/sp9. Scrape.
Add the remaining ingredients and blend 15secs/sp3/rev "Counter-clockwise operation" . Don't overmix or you'll mush up the fruit.
Spread evenly into the prepared tin and bake for 30-40 mins, or until cooked when tested.
Leave in the tin for 10 mins, before cooling on a wire rack.
Drizzle with (optional) lemon glaze
or serve sliced with butter and jam (optional) but delicious 😍

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
