Double Banana Coconut Cake

  • 4 bananas, Ripe
  • 180 g of Desiccated Coconut
  • 125 g butter - Softened
  • 1/2 cup of oil
  • 2 eggs
  • 250 g of sugar
  • 500 g SR Flour
  • 330 g Milk

Recipe's preparation

    PLEASE NOTE THIS RECIPE MAKES TWO CAKES

  1. Pre- heat oven to 180deg

     

  2. Add Bananas, oil and coconut into bowl mix 5sec, speed 6

  3. Add butter and sugar mix 10sec speed 5

  4. Add the remaining ingredients to the TM bowl- Milk, flour, eggs mix 20sec speed 4

  5. Pour batter into greased cake tins. 

Tip

You can replace the oil with another 125g of butter if preferd. 

I normall dress this with an equal mix of icing sugar and passionfruit!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Hi folks,
    As a newbie to the Thermomix world. Is it normal not to have a cooking time? Or should I have deducted the 5 minutes prep time from the 50 minutes shown above?

    i just made this but i made muffins. they were really yummy and i ended up with 30 good sized muffins.
