Ingredients
Chocolate Cake
- 120 g Butter, roughly chopped
- 2 eggs
- 100 g full cream milk
- 120 g caster sugar
- 120 g Self Raising Flour
- 30 g cocoa powder
- 1 tsp baking powder
- 4 tbsp apricot jam, to stick cake and marzipan layer
Chocolate Coating
- 100 g dark chocolate
- 80 g thickened cream
Almond Paste
- 100 g ground almonds
- 100 g icing sugar
- 1 egg yolk
- 2 drops Almond extract

Preheat oven to 180C. Grease and line a 24 cm cake tin.
Melt butter in mixing bowl 2mins / 60C / speed 4.
Add all remaining ingredients and mix 20 sec / speed 5.
Pour into prepare cake tin and bake for 30 mins or until skewer comes out clean. Allow to cool for 5 mins in tin before transferring to a wire rack to cool completely.
Mix all ingredients for 10 secs / speed 5.
Roll mix into a ball and cut about a quater off. Make 11 small balls from the quarter and roll the remaining paste into a round to fit the size of the cake.
Place the white chocolate in the mixing bowl and grind for 5 secs / speed 10.
Then melt the chocolate for 2 mins / 50 C / speed 3.
Roll the marzipan balls in the white chocolate and leave to harden. The balls will be used to decorate the cake.
Grind the chocolate pieces in the bowl for 5 secs / speed 10. Add the cream and melt for 2-3 mins / 50 C / Speed 3.
Refridgerate until it is firm enough to coat the cake.
Cut the chococlate in half through the middle. Spread the bottom layer with a thin layer of apricot jam and lay the almond round on top and cover with another thin layer of apricot jam and place the second layer of cake on top.
Cover the cake with the chocolate icing - top and sides.
Place the marzipan balls evenly around the edge using a small spot of chocoalate coating to secure.

Tip
You can just buy a block of marzipan (200-250g) to use instead of making the almond paste if you wish.
Any jam can be used to stick the two pieces of cake together that does not have large pieces of fruit.
The 11 balls represent the 12 Apostles (excluding Judas). The more traditional Simnel cake is a fruit cake but we prefer chocolate....
