Recipe's preparation

    Prepare the Oranges
  1. Slice the tops off each of the Oranges to make lids.  Scoop out the flesh and reserve with juice for use in the sorbet. 

    Freeze the empty orange shells and lids until required.

  2. Make the Sorbet
  3. Turn the sugar to caster sugar in the bowl for 3 secs/speed 9.

     

  4. Add the reserved flesh and juice from the 4 oranges along with the egg white and blend 5sec / speed 7.

  5. Add the ice cubes and blend until smooth and creamy 30-60 secs / speed 10.

     

  6. Serve

    Take the orange shells from the freezer and fill with the sorbet. Place the lid on top.  Return to the freezer until ready to serve.

     

    Just before serving, push a skewer into the lids to create a hole and push in a leaf ( bayleaf, orange/ lemon leaf etc) to decorate.  Leave to stand for 5-10 mins until the sorbet softens before serving.

Tip

 

To scoop out the flesh of the orange take a sharp knife around the edge between the skin and the flesh and then score across the segments.  Use a spoon to then scoop out the loose flesh.

 

ICE-CREAM OPTION - take four to six scoops of vanilla ice-cream blended with the orange juice/flesh    

3 secs/speed 5 to make orange ice-cream to fill the oranges instead of sorbet.
