Ingredients
Easy Shortbread Biscuits
- 100 grams raw sugar
- 220 grams plain flour
- 120 grams rice flour
- 1 pinch salt
- 220 grams Butter, chilled and roughly chopped
- Extra Plain Flour, To roll out
To decorate - if required
- icing sugar, to dust
- Melted Chocolate, to decorate if preferred

Preheat oven to 150 degrees and line 2 - 3 baking sheets with baking paper
Mill sugar for 7 seconds/speed 9
Add Plain Flour, Rice Flour and Salt and mix 3 seconds/speed 4
Add Butter and mix 15 seconds/speed 6 - the mixture will look very crumbly at this stage
Turn mixture out onto a floured surface and knead until smooth
Roll mixture on floured surface (also dust flour on top of dough to prevent sticking to the rolling pin) to desired thickness - mine is usually just less than a cm in thickness and cut with your favourite cookie cutter
Place on prepared baking sheets and bake for approximately 40 - 45 minutes or until starting to change colour (you may need to swap your baking trays over in your oven depending on how evenly your oven cooks)
Cool on trays and then either dust with icing sugar or decorate with melted chocolate of your choice, whichever you prefer - they are pretty good just plain too!!

Tip
I tend to use my star cutter or Christmas tree cutter at Christmas, heart cutter for Valentines day and then a chick, bunny or egg cutter for Easter.... A biscuit for all seasons!!!

Thanks for sharing this recipe! I readjusted it a bit to suit gluten-free. I haven't tried your non-gluten-free version yet but your preparation steps were perfect and I ended up with a nice dough. I just need to perfect my own mix of ingredients now!
