Ingredients

Risotto

  • 1 brown onion
  • 1 centimetre ginger
  • 30 grams extra light olive oil
  • 100 grams white wine
  • 300 grams arborio rice
  • 2 heaped teaspoons tomato paste
  • 2 tablespoons TM Veg Stock Concentrate
  • 400 gram chicken breast, Cubed
  • 200 grams mushrooms, Sliced
  • 250 grams water
  • 1 can Apricot Nectar (405ml)
  • 80 grams spinach

Recipe's preparation

  1. Place measuring cup on lid.  Chop onion and ginger 3 sec/speed 7.  Scrape down bowl

     

    Add oil and saute 3 min/Varoma/speed 1(no measuring cup)

     

    Add Wine and Rice.  Cook 2 min/100/Counter-clockwise operation"Counter-clockwise operation" speed 1 (no measuring cup)

     

    Insert Butterfly.  Add chicken, veg stock, water, mushrooms, tomato paste, apricot nectar.  Cook 22 min/100/Counter-clockwise operation"Counter-clockwise operation" speed 1 (no measuring cup)

     

    Pour into thermoserver, stir in spinach, place the lid onto the thermoserver.  Leave for 4 minutes

     

    Enjoy!!!

Tip

Replace 2 tablespoons of TM veg stock concentrate with 2 teaspoons of vegeta gourmet veg stock powder if you have no stock concentrate in the fridge tmrc_emoticons.)

    I visited my mum and made this for her last weekend. While she hates mushrooms, she absolutely loved this dish! I make a beautiful apricot chicken and was skeptical. You've won me over for sure with your risotto version!

    My two teen sons and I really enjoyed this. I’ve never cooked a risotto before with the measuring cup out of the lid but it turned out perfectly. Thanks for a great recipe

    I made this last night for dinner - I had a bbq chicken to use up. So hand shredded this and added at the end with the baby spinach in the thermoserver.
    I didn't have any mushrooms so omitted these from the recipe. I did add a carrot and a capsicum after sauteing the onion and garlic and ginger. I chopped these for about 3-4 seconds on speed 7.
    It has a nice light or mild apricot taste - something different - especially if you are not an apricot fan.
    I enjoyed this but I found it to be a little gluggy - may have cooked to long since I didn't have any actualy chicken in the bowl for the cooking process?
    I did enjoy it though and i sprinkled some parmasen cheese over before serving!

    I switched it up a bit. Didn't have enough apricot nectar so I added some tinned apricots. No ginger, so I added a teaspoon of ground ginger. The butterfly kept slipping out, so I took it out and did Counter-clockwise operation"Counter-clockwise operation" speed 1.5. Kept lid on until the last 10 mins, to account for slight lack of liquid. This is super yum!
