- 120 grams Butter
- 120 grams caster sugar
- 50 grams blanched almonds
- 50 grams plain flour
- 3 egg whites
- 1 tbsp Rum

Grind the almonds, speed 9 for 20 seconds. Set aside. Melt butter 4 minutes, 60 degress, speed 1. Add sugard, flour, ground almonds, egg whites and rum in that order (don't want to heat the egg whites yet). Mix 30 seconds speed 3. Spoon into financier moulds and bake 15 to 20 minutes at 200 degrees. They will be nicely gooey inside but should be browned and with a cracked top.

From a french blog, great way to use leftover egg whites from making rosewater creme anglaise.
Thought I was using a financier mould, turns out it was a mini tartlet mould.... financier mould is a rectangular mould, like a bullion shape! Oh well, still taste good. And I have no idea what to call it otherwise!
