Ingredients

raw marzipan

  • 130 grams blanched almonds
  • 70 grams Coconut sugar, or rapadura
  • 1-2 teaspoons Rosewater

raw simnel cake

  • 100 grams Brazil Nuts
  • 60 grams Linseeds
  • 200 grams dessicated coconut
  • 115 grams water
  • 60 grams Maple syrup
  • 130 grams mixed dried fruit, raisins, sultanas, currants, dried lemon and orange
  • 1/4 teaspoon each of dried ginger, nutmeg, cinnamon, cloves

Recipe's preparation

    marzipan
  1. Grind almonds spped 9 for about 10 seconds, add sugar and 1 tsp rosewater, grind speed 9 for about 10 seconds until it starts to stck together in a ball, add rosewater a few drops at a time to help it stick together. Turn out onto a thermomat, divide into 2/3rds to roll out to a round shape and the remaning 1/3rd form into 11 small balls (representing the apostles minus Judas)

  2. Raw simnel cake
  3. Grind nuts and linseeds and coconut on speed 9 for about 10 seconds, add water and maple syrup and grind for about 20 seconds on speed 9, it should stick together like a dough. Then add the spices and dried fruit and mix for 20 seconds on speed 9. The fruit will not be finely chopped, you do want to have some texture to the cake. 

    Turn it out into a 20 cm cake tin which is lined with baking paper. Press the cake into the tin to be smooth on top. 

     

    Roll the marzipan into a round shape the size of the tin and place it on the top, place the 11 balls of marzipan around the top. Chill the cake for 30 minutes then serve sliced into 11 wedges.
