Ingredients
Red Kidney Bean Brownies
- 250 g red kidney beans
- 10 g cacao powder (or cocoa powder)
- 40 g Quick Oats
- 1/4 teaspoon salt
- 75 g maple syrup (real) or Agave
- 2 sachets Steiva or 2tbsp of Molases
- 40 g coconut oil
- 2 teaspoon Pure Vanilla extract or vanilla bean paste
- 1/2 teaspoon Baking Powder (make your own EDC)
- 140 g Chocolate chips or Cacao bits
- 100 g macadamia nuts

Combine all ingredients except chips and blend until completely smooth.
Stir in the chocolate chips, then pour into a greased 8×8 pan.
Optional: sprinkle extra chocolate chips and macadamia nuts over the top. Cook 15-18 minutes, then let cool at least 10 minutes before trying to cut. Makes 9-12 brownies.
* it you don't want to use Chocolate you can use Cacao Nibs instead.
* I used dried red kidney beans and soaked them over night with currants then either boil or steam them for 20mins this will kill any lectins. You could even use Aduki beans as well. If you have any beans left over or make a double batch you can freeze them for next time

What weight of dried kidney beans do you start with, does the weight double after soaking??
Really enjoyed this recipe. I used tinned kidney beans and it tasted great.
Very nice guilt free brownies. I replaced the maple syrup with 9 mejool dates and left out the nuts for school snacks. Next time I'll try adding 100g of pumpkin & sunflower seeds.

I get mine either from woolies or health food shop. If you get the Black strap Molases it has better health properties eg lots of good minerals

I am also keen to give this a go. Loved the cake version. Where do I buy Steiva or molases - what aisle of the supermarket should I be looking in?
Yes you can just drain them off so you have 250g You can also use Black beans too however I think there a bit hard to come by.
