Ingredients

Buns

  • 300 g water
  • 15 g dried instant yeast
  • 600 g plain flour
  • 3/4 tsp salt
  • 30 g Butter
  • 15 g Milk powder (full cream)
  • 120 g sugar
  • 1 tsp Nutmeg
  • 1 tsp lemon essence
  • 165 g Mixed fruit

Syrup

  • 100 g sugar
  • 1 tsp Essence of Lemon
  • 1 tsp water

Recipe's preparation

    Buns
  1. Add water & yeast to mixing bowl and mix 3 min/37°C/Speed 2.

  2. Add flour, salt, butter, milk powder, sugar, lemon essence, nutmeg to mixing bowl & mix 10 sec / Speed 6.

  3. KneadDough mode"Dough mode" 6 min adding mixed fruit to mixing bowl through hole in lid when one minute remaining.

  4. Transfer to thermomat or floured bowl (cover with plastic wrap) and place in warm place for 30 minutes or until doubled in size.

  5. Divide into 10 even portions using spatula, form into rolls and place into lined baking tray (high sides), close but with room to expand. Leave to prove again for 60 min in warm place.

  6. Bake for 30 minutes (220°C) or until buns sound hollow when tapped on top.

  7. Remove from baking tray and transfer to cooling rack.

  8. Syrup
  9. Place water, sugar & lemon essence in mixing bowl and cook 2 min / 100°C / speed 4.

  10. Using pastry brush, apply sugar to warm buns, allow to cool for 5 minutes and serve while still warm.

Tip

Can be frozen when fresh.

Yummy toasted with butter.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
