Essentials

  • 200 grams Tasty cheese
  • 2 Zuchinnis, (aprox 300 grams)
  • 3 carrots, (appox 300 grams)
  • 1 brown onion
  • 300 grams bacon, Chopped
  • 8 eggs
  • 250 grams Milk
  • 100 grams Self Raising Flour
  • 100 grams Leek (sliced)
  • pepper, To taste

Recipe's preparation

  1. Grate Cheese on speed 7, for 3-4 secs. Set aside.

  2. Add zucchini, carrot and onion chop speed 5, 4-5 secs. Scrape down sides.

  3. Add all remaining ingredients including cheese and mix speed 4, for 40 secs

  4. Pour into an oiled Pie dish and 12 muffin tray and bake on 180 degrees for 35-45 mins, until top is well browned.

Tip

This is a great option for Lunchboxes
The muffins will need a shorter cooking time than the Pie

    This is delicious. Have now made it several times. An addition I have made this time is to add halved cherry tomatoes on top as I have an abundance.

    Love these! And so did my husband - he's asked me to make them again. Next time I'll make all muffins - great to heat up for breakfast. I have chickens, so a great way to use up a bunch of eggs too!

    Delicious. I made a half portion for breakfast this week. The leek has been grated so will try the last step on reverse.

    So easy and tasty.

    I did not have leek I just used normal onion.

    I saute the onion for 1min on varoma setting.

    I also added sliced mushroom layer on top before putting in oven.

    Yum yum yum

    I did not have leek so left them out.

    I saute the onions for 1min on varoma.

    I added sliced mushrooms and placed them on top.

    Then baked and came out delicious.
