- 125 grams Butter, cubed
- 200 grams brown sugar
- 25 grams golden syrup
- 1 tablespoon gingerbread spice
- 1 egg, beaten
- 320 grams self-raising flour
- 1/2 teaspoon bicarbonate of soda

- Preheat oven to 180° and line 2 baking trays with paper or baking mats.
- Place butter into mixing bowl.
- Add brown sugar.
- Add golden syrup.
- Add gingerbread spice.
- Heat for 5 min/50°/speed 2 or until melted and combined.
- Add beaten egg and mix 5 sec/speed 3.5.
- Add SR flour.
- Add bicarbonate soda.
- Mix 10 sec/speed 5 or until combined.
- Transfer to a bowl, cover and refrigerate for 30 minutes.
- Roll mixture into balls (approx heaped 1/2 Tablespoon each) and place on to lined trays leaving room to spread slightly.
- Bake for 10-12 minutes.
- Remove from trays immediately and place on wire racks to cool.
Tip
Substitute gingerbread spice for your own spice mix or heaped 1/2 Tablespoon of Christmas Spice Mix from Cookidoo.
