  • 120 grams golden syrup
  • 2 & 1/2 teaspoons ginger, Ground
  • 1 plain flour, Cup
  • 2 teaspoons baking powder

Recipe's preparation

  1. Preheat oven to 180 degrees and line biscuit trays with baking paper.

    Put butter, sugar and golden syrup into bowl and cook 8 min/37 deg/speed 2.

    Add remaining ingredients and mix 5 sec/speed 5

    Scrape down sides and mix for a further 5 sec/speed 5

    Drop a dollop (around 1/2 tablespoon) on the lined baking tray, but leave room for biscuits to spread to double the size and bake for 11 minutes. 

    Leave them on trays to cool.

Tip

These will burn quickly, so make sure you take them out at 11 minute mark.

    Used 2 1/2 T ginger (was old!) Just great flavour. Baked too close together and they joined and went soft. Last tray which only had 9 on it was great.

    Baked again today, added 1t cardamom, substituted maple for golden syrup.

    Baked at 170. Came out hard as, great flavour. Only yielded 21 - will bake again but will double - they are addictive

    A real hit and soooo easy.

    And, for anyone reading this who are wondering what to do for a person on chemotherapy, cannot recommend these highly enough. Just the right blend of sweet with zing that we chemo-ians can actually taste and enjoy.

    We're getting more visitors than normal due to my illness, so these are perfect, keep well, family, guests and I love them in equal measure.

    Thank you, thank you, thank you. Just love the 11 minute rule, so true.

    Another success, but had no raw sugar, used demeejera sugar - winner!!!
