Ingredients

Ginger and Fruit Cake

  • 40 grams ginger, stem
  • 9 dried apricots
  • 7 pitted dates
  • 50 grams sultanas
  • 7 dried figs
  • 100 grams water
  • 130 grams olive oil
  • 75 grams Coconut sugar, Can use rapadura sugar
  • 2 eggs
  • --- almond meal, 1/2 cup
  • tapioca flour, 1/2 cup
  • brown rice flour, 1/2 cup
  • buckwheat flour, 1/2 cup
  • 100 grams Almond milk, use nut milk of choice
  • 30 grams kombucha vinegar, can use apple cider vinegar
  • 2 teaspoons baking powder
  • 1 teaspoons bicarbonate of soda
  • 1 pinches salt
  • 2 teaspoons Vanilla Paste
  • 2 teaspoons ginger powder

Recipe's preparation

    Fruit paste
  1. Add fresh ginger, dried apricots, dates, sultanas, figs and water to jig and cook 8 mins, 80, sp 1
    Allow to cook for 10 minutes before continuing.

  3. Add oil and sugar and beat 20 sec sp 4, scrape down sides
    Add eggs and mix 10 sec sp 4
    Add all remaining ingredients and mix 20 sec sp 4
    Pour into square cake container and bake in 180 oven until cooked through, approx 40 minutes depending on your oven.
    Allow cake to cool in tin for 30 minutes before cooling on rack.
  4. Note: you can add items to mixture before pouring into the cake tin, adding at this point will stop from being over processed. eg Seeds, nuts or fruit such as pepitas, walnuts, slivered almonds, cranberries, sultanas or glace cherries depending on your preference.
