Ingredients

Gluten-Free Banana, Coconut and Lemon or Cinnamon Loaf

  • 115 g coconut oil
  • 160 g honey
  • 160 g dessicated coconut
  • 3 Large Ripe Bananas
  • 115 g Gluten free or buckwheat flour or almond meal
  • 1 teaspoon baking soda
  • 4 can Free-range eggs
  • Zest of 2 lemons or 1 1/2 teaspoons cinnamon
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 180° C;
    2. Place honey and coconut oil in TM Bowl;
    3. Warm 2 minutes/80 degrees/speed 1;
    4. Place bananas in TM Bow with honey mixturel;
    5. Mash 2 seconds/speed 3;
    6. Add coconut, flour, baking soda, eggs, lemon zest and salt in TM Bowl;

    5. Combine 8 seconds/speed 4;
    6. Scrape down sides;
    7. Combine a further 2 seconds/speed 4, being careful not to over-mix;
    8. Pour into a greased and lined loaf tin and bake at 180° C for 1 hour or until a skewer inserted into the middle comes out clean.

Tip

1. Can be made into Muffins (see photo). Reduce cooking time to suit.
2. The loaf/muffins will keep (unsliced) in an airtight container for up to 5 days. They
also freeze well;
3. A slice of this is delicious warmed up and spread with a little butter.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
