- 250 grams of strawberries, hulled reserve 3 and chop the rest
- 2 1/2 cups of gluten free self raising flower
- 2/3 Cup of castor sugar
- 1/2 cup of baby rice cereal
- 1 lemon zested
- 1 1/2 cups of skim milk
- 2 eggs
- 2 level tablespoon of vegetable oil

Add the strawberries, lemon zest, sugar, flour and rice cereal and the milk and eggs, oil to the bowl - mix 45 seconds speed 4 - remove jug and with spatula scrape bottom of bowl and mix gently
Preheat oven to 160, if fan forced switch to low
Pour batter in to a well greased 12 muffin tray place a quarter of a sliced strawberry that was reserved to the top and cook 25-30 minutes untill a skewer comes out clean - rest for 10 minutes before lifing out

Very nice. Gluten free is often hard to adjust to but these are good. You have to wait until they are fully cold before the paper cup comes off cleanly but I couldn't wait!
